Of course I used food coloring too because “red is the Gods color” - I actually made this recipe twice in order to get the right sponginess on the cake layer. We need to prepare 3 recipes: a strawberry cake (the strawberry cake is good on its own too), a milk cream and a kiwi jelly layer. And once again, you need to have the butter super-soft!

Kiwi layer ingredients:
5 Kiwis
50g Corn starch
150g Sugar
550g Water

  1. The 2 butter sticks need to be soft, almost liquid soft (I keep them on the warm stove for a bit) - add the 2 butter stick (that are SOFT!), the 250g of sugar and an egg in a bowl and mix (lowest speed).

  2. Mix in the remaining 4 eggs one by one - fine, 2 by 2

  3. Add the 200g of milk, ~400g of strawberry puree and mix (low speed)

  4. Add the 350g of flour with one teaspoon (full) of baking powder - you can use the mixer or switch to a spatula.

  5. Bake at 335°F for 45 minutes. Set aside to cool and start the cream.

Kiwi layer

  1. Peel and blend the 5 kiwis.

  2. Add the 500g of water along with the 50g of corn starch and 150g of sugar in a pot and stir vigorously

  3. Add the kiwi puree and stir until it gets to a boiling point - and until it starts to thicken.

  4. Towards the end, add the zest of a lemon too. Next step is to put it all together!

Assembly

  1. Pour the milk cream over the cooled strawberry cake and distribute as even as possible.

  2. With a spoon, add the kiwi layer and then smooth evenly.

  3. Now throw it i the fridge for at least 3 hours.

    I should mention all 3 layers can be served individually too

If you need to buy the main ingredients (the rest you should have):

Milk cream:

  1. In a pot, over low fire, we add the 200g of sugar along with a bit of milk, enough to barely cover the sugar. We can add the 50g of corn starch and the 50h of flour. Stir over low fire until everything blends and resembles sour cream.

  2. We start adding the rest of the 1 liter of milk slowly while constantly stirring. It will take a long time and you have to constantly stir, until it reaches the boiling point. Stir until it becomes thick again.

  3. Add the lemon zest from 2 lemons at the end and then let it cool.
