Orangey.

This tastes the complete opposite of what it looks. It looks like a bread, it’s not. It looks crumbly, it’s not…and it looks bland, it’s not.

The recipe is the easiest if you have a blender - cutting it is. But if you have soccer friends, its worth it.

Ingredients:
600g baklava pastry sheet
2 Oranges
200g Sugar
4 Eggs
300ml Milk
200ml Cooking oil or coconut oil
1 tsp Baking powder
1 tsp Baking Soda

Syrup ingredients:
500ml Water
400g Sugar
Juice from 3 Oranges

  1. Preheat oven to 320 degrees.

  2. Separate pastry sheets, make them into a ball and leave them in an oven tray to dry out. The pastry will take some time to dry out but it needs to be crunchy.

3. Cut the oranges into pieces (with peel, without ends) and place everything (except fillo) into a blender - blend for at least 2 minutes or until smooth.
4. Once pastry is crunchy, use your hands to break up the sheets and place into a bowl. Add 1/2 the mixture from the blender to half of the pastry and stir. Add the other half and stir.
5. I lined a 23cm x 33cm tray for this. Add the cake mix and cook at 320F for 40 minutes.
6. Take the cake out and pour the cool syrup over the top. It will take a bit of time to absorb but allow it a bit of time (I left it over night) and enjoy!
